Ingredients

(Serves 4)

  • 4 cups watermelon, cubed and chilled

  • 1 cup cucumber, thinly sliced

  • 1/2 cup crumbled feta cheese

  • 1/4 cup red onion, thinly sliced

  • 2 tbsp fresh mint leaves, chopped

  • 1 tbsp fresh basil leaves (optional), chopped

  • Juice of 1 lime

  • 1 tbsp extra virgin olive oil

  • Salt and cracked black pepper to taste

  • Balsamic glaze (for drizzling, optional)

Instructions

  1. Prep the Produce:
In a large bowl, combine the chilled watermelon cubes, sliced cucumber, red onion, and herbs.

  2. Add Cheese & Dress:
Gently fold in the crumbled feta cheese. In a small bowl, whisk together the lime juice and olive oil. Drizzle the dressing over the salad and toss lightly to combine.

  3. Season:
Add salt and cracked pepper to taste. Be mindful of the saltiness of the feta.

  4. Plate It:
Transfer to a serving platter or shallow salad bowl. Drizzle with balsamic glaze for a sweet-tangy finish if desired.

  5. Serve & Enjoy:
Best served immediately while chilled. Perfect as a starter or a light side for grilled dishes.
