These Dark Chocolate Lava Cakes are a timeless dessert — crisp on the outside, warm and gooey in the middle, and utterly irresistible. Made with rich dark chocolate and baked just long enough to form a delicate shell, each cake reveals a molten core the moment you cut in.
Perfect for date night, dinner parties, or a quiet indulgence at home, these individual cakes add a touch of drama and elegance to any setting.
Ingredients
(Makes 4 individual cakes)

4 oz (115g) dark chocolate (60–70% cocoa), chopped

1/2 cup (1 stick) unsalted butter

2 eggs

2 egg yolks

1/4 cup granulated sugar

1/8 tsp salt

2 tbsp all-purpose flour

Butter and cocoa powder (for greasing and dusting ramekins)
Instructions

Prep Ramekins:
Preheat oven to 425°F (220°C). Generously butter 4 ramekins and dust the insides with cocoa powder. Tap out excess and set aside. -
Melt Chocolate & Butter:
In a heatproof bowl, melt the chocolate and butter together over a double boiler or in short bursts in the microwave. Stir until smooth and glossy. Let cool slightly. -
Make the Batter:
In a mixing bowl, whisk the eggs, egg yolks, sugar, and salt until pale and thick (about 2 minutes). Gently fold in the melted chocolate mixture. Sift in the flour and fold until just combined. -
Bake:
Divide the batter evenly between the prepared ramekins. Place them on a baking sheet and bake for 11–13 minutes, or until the edges are set but the centers are still soft. -
Serve Warm:
Let the cakes rest for 1 minute, then gently run a knife around the edges and invert onto dessert plates. Serve immediately — ideally with a dusting of powdered sugar, a few fresh berries, or a scoop of vanilla ice cream.
