Ingredients

(Serves 6–8)

  • 4 to 5 lb beef brisket

  • 2 tbsp olive oil

  • 1 tbsp kosher salt

  • 1 tsp black pepper

  • 1 tbsp smoked paprika

  • 1 tbsp brown sugar

  • 6 cloves garlic, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme leaves

  • 1 tbsp Dijon mustard

  • 1 cup beef broth

  • 1/2 cup red wine (or additional broth)

  • 1 large onion, sliced

  • 2 carrots, cut into large chunks

  • 2 celery stalks, chopped


Instructions

  1. Preheat & Prep:
    Preheat your oven to 300°F (150°C). Pat the brisket dry with paper towels.

  2. Make the Rub:
    In a small bowl, mix olive oil, salt, pepper, paprika, brown sugar, garlic, rosemary, thyme, and Dijon mustard into a paste. Rub it all over the brisket, pressing it into the meat.

  3. Sear the Brisket (Optional):
    For extra flavor, sear the brisket in a hot skillet for 2–3 minutes per side to create a browned crust.

  4. Layer the Veggies:
    In a large roasting pan or Dutch oven, layer the onions, carrots, and celery. Place the brisket on top, fat-side up.

  5. Add Liquid & Roast:
    Pour beef broth and wine around the brisket (not over it). Cover tightly with foil or a lid and roast for 3.5 to 4.5 hours, until fork-tender.

  6. Rest & Slice:
    Let the brisket rest, covered, for 20–30 minutes before slicing against the grain. Serve with the roasted vegetables and pan juices spooned over top.
