Ingredients
(Serves 6–8)
-
4 to 5 lb beef brisket
-
2 tbsp olive oil
-
1 tbsp kosher salt
-
1 tsp black pepper
-
1 tbsp smoked paprika
-
1 tbsp brown sugar
-
6 cloves garlic, minced
-
1 tbsp fresh rosemary, chopped
-
1 tbsp fresh thyme leaves
-
1 tbsp Dijon mustard
-
1 cup beef broth
-
1/2 cup red wine (or additional broth)
-
1 large onion, sliced
-
2 carrots, cut into large chunks
-
2 celery stalks, chopped
Instructions
-
Preheat & Prep:
Preheat your oven to 300°F (150°C). Pat the brisket dry with paper towels. -
Make the Rub:
In a small bowl, mix olive oil, salt, pepper, paprika, brown sugar, garlic, rosemary, thyme, and Dijon mustard into a paste. Rub it all over the brisket, pressing it into the meat. -
Sear the Brisket (Optional):
For extra flavor, sear the brisket in a hot skillet for 2–3 minutes per side to create a browned crust. -
Layer the Veggies:
In a large roasting pan or Dutch oven, layer the onions, carrots, and celery. Place the brisket on top, fat-side up. -
Add Liquid & Roast:
Pour beef broth and wine around the brisket (not over it). Cover tightly with foil or a lid and roast for 3.5 to 4.5 hours, until fork-tender. -
Rest & Slice:
Let the brisket rest, covered, for 20–30 minutes before slicing against the grain. Serve with the roasted vegetables and pan juices spooned over top.
Serving Tip:
Brisket is made for sharing — display yours on a large wooden cutting board or a deep ceramic platter from Set The Scene. Surround it with fresh herbs or roasted veggies for an extra touch of warmth and elegance.
