Ingredients

(Serves 2)

For the Fish:

  • 2 mahi mahi fillets (about 6 oz each)

  • Salt and pepper to taste

  • 1/2 tsp paprika

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 lime, halved

For the Mango Salsa:

  • 1 ripe mango, diced

  • 1/4 cup red bell pepper, finely chopped

  • 1/4 cup red onion, finely chopped

  • 1 small jalapeño, seeded and minced

  • 2 tbsp fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste


Instructions

  1. Make the Mango Salsa:
    In a bowl, combine mango, bell pepper, red onion, jalapeño, and cilantro. Add lime juice and a pinch of salt. Stir well and set aside to let flavors meld.

  2. Season the Mahi Mahi:
    Pat the fillets dry with paper towels. Season both sides with salt, pepper, and paprika.

  3. Sear the Fish:
    Heat olive oil and butter in a non-stick skillet over medium-high heat. Add the fillets and sear for 3–4 minutes per side, or until golden and cooked through (internal temp: 137–140°F).

  4. Finish with Lime:
    Squeeze fresh lime juice over the fillets in the final minute of cooking for a citrusy finish.

  5. Plate & Serve:
    Place each fillet on a plate and top generously with mango salsa. Serve with rice, grilled vegetables, or a fresh green salad.
