Chinese-Style Vegetable Fried Rice

This Chinese-Style Vegetable Fried Rice is fast, full of flavor, and better than takeout! Made with day-old rice, colorful veggies, and a savory soy-garlic sauce, it’s the perfect go-to for a satisfying meal. Serve it on its own or as a base for stir-fried chicken, tofu, shrimp, or eggs.

And the best part? It’s all done in one pan in under 20 minutes!


🍚 Ingredients:

  • 3 cups cooked rice (preferably cold, day-old rice for best texture)

  • 2 tbsp vegetable oil or sesame oil

  • 2 garlic cloves, minced

  • 1 small onion, finely chopped

  • 1 cup mixed vegetables (carrot, corn, green beans, peas, bell pepper – fresh or frozen)

  • 2 eggs, lightly beaten (optional)

  • 2–3 tbsp soy sauce

  • 1 tsp oyster sauce (optional for added depth)

  • 1 tsp sesame oil (for finishing)

  • Salt & black pepper to taste

  • 2 green onions, chopped

  • Optional: chili flakes or chopped chili for heat


🔥 Instructions:

1. Prep Your Rice

Break up any clumps in your cold, cooked rice with a fork or clean hands. Set aside.

2. Sauté Aromatics

Heat oil in a large non-stick skillet, wok, or ceramic sauté pan over medium-high heat. Add garlic and onion and stir-fry for 1–2 minutes until fragrant.

3. Cook the Veggies

Add mixed vegetables to the pan. Stir-fry for 3–5 minutes until just tender. Push everything to the side of the pan.

4. Scramble the Eggs (Optional)

If using eggs, pour the beaten eggs into the empty side of the pan and scramble until just set. Mix into the vegetables.

5. Add Rice & Seasoning

Add the rice to the pan and stir everything together. Pour in soy sauce, oyster sauce (if using), and a drizzle of sesame oil. Toss well to evenly coat the rice and veggies. Cook for another 2–3 minutes, stirring often to prevent sticking.

6. Finish & Garnish

Taste and adjust seasoning with salt, pepper, or more soy sauce if needed. Stir in chopped green onions. Serve hot!
