Caribbean-Style Creamy Coconut Corn

🌽 Ingredients:

  • 4 ears fresh corn, kernels sliced off (or 3 cups frozen corn, thawed)

  • 1 tbsp butter or coconut oil

  • 2 cloves garlic, minced

  • ½ onion, finely chopped

  • 1 cup coconut milk (not cream)

  • ¼ tsp thyme (fresh or dried)

  • ½ scotch bonnet pepper, deseeded and finely chopped (optional, for heat)

  • Salt and black pepper to taste

  • 1–2 tbsp chopped chive or green onion (for garnish)


🔥 Instructions:

1. Sauté Aromatics

In a medium saucepan or ceramic sauté pan, heat butter or coconut oil over medium heat. Add onion, garlic, and thyme. Sauté until fragrant and translucent, about 2–3 minutes.

2. Add Corn & Simmer

Stir in corn and cook for 2–3 minutes. Pour in coconut milk and add chopped scotch bonnet (if using). Stir well and bring to a gentle simmer.

3. Cook Until Creamy

Simmer uncovered for 10–12 minutes, stirring occasionally, until the coconut milk reduces slightly and coats the corn. Season with salt and pepper to taste.

4. Garnish & Serve

Remove from heat and sprinkle with chopped chive or green onion. Serve warm as a side dish or with steamed rice for a simple vegetarian meal.
