It’s a great option for both casual family dinners and impressive entertaining—quick to prep, easy to roast, and packed with flavor.

🐖 Ingredients:

  • 1 pork tenderloin (about 1 to 1½ lbs)

  • 1 tbsp olive oil

  • Salt & black pepper, to taste

  • 1 tsp garlic powder

  • ½ tsp dried thyme

  • ½ tsp dried rosemary

For the Glaze:

  • 2 tbsp Dijon mustard

  • 1½ tbsp honey

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tbsp apple cider vinegar or lemon juice

  • ½ tsp paprika

🔥 Instructions:

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry and season with salt, pepper, garlic powder, thyme, and rosemary.

2. Sear the Pork

Heat olive oil in an oven-safe skillet or ceramic roasting dish over medium-high heat. Sear the pork for about 2 minutes per side until lightly browned.

3. Make the Glaze

In a small bowl, mix together mustard, honey, garlic, soy sauce, vinegar, and paprika. Brush half the glaze over the seared pork.

4. Roast to Perfection

Transfer the skillet to the preheated oven and roast for 18–22 minutes, or until the internal temperature reaches 145°F (63°C). Midway through roasting, brush with the remaining glaze.

5. Rest & Slice

Remove from the oven and let rest for 5–10 minutes before slicing. This keeps the pork juicy and allows the flavors to settle.

🍽️ Serving Ideas:

Serve sliced over mashed potatoes, roasted vegetables, or a wild rice pilaf. Drizzle extra pan juices over the top for added flavor.
