Tropical Pineapple Coconut Crumble

Sweet, juicy pineapple baked with warm spices and topped with a golden coconut crumble—this Tropical Pineapple Coconut Crumble is a Caribbean-inspired twist on a classic dessert. It’s easy to make, bursting with natural fruit flavor, and perfect served warm with a scoop of vanilla or coconut ice cream.


🍍 Ingredients:

For the Filling:

  • 3 cups fresh pineapple, chopped (or canned in juice, drained)

  • 1 tbsp lime juice

  • 2 tbsp brown sugar

  • 1 tsp vanilla extract

  • ½ tsp ground cinnamon

  • 1 tsp cornstarch (for thickening)

For the Crumble Topping:

  • ½ cup rolled oats

  • ½ cup all-purpose flour

  • ¼ cup shredded coconut (sweetened or unsweetened)

  • ⅓ cup brown sugar

  • ½ tsp cinnamon

  • Pinch of salt

  • 6 tbsp cold butter, cubed


🔥 Instructions:

1. Preheat & Prepare

Preheat oven to 350°F (175°C). Lightly grease a ceramic or glass baking dish (around 8x8 inches or similar).

2. Make the Filling

In a mixing bowl, toss pineapple with lime juice, brown sugar, vanilla, cinnamon, and cornstarch. Spread evenly in the prepared baking dish.

3. Make the Crumble

In another bowl, combine oats, flour, shredded coconut, brown sugar, cinnamon, and salt. Add the cold butter and rub it into the mixture using your fingers or a pastry cutter until the mixture resembles coarse crumbs.

4. Assemble & Bake

Sprinkle the crumble topping evenly over the pineapple mixture. Bake for 30–35 minutes, or until the top is golden brown and the filling is bubbling around the edges.

5. Cool Slightly & Serve

Let cool for 10 minutes before serving. Enjoy warm with ice cream, whipped cream, or a drizzle of coconut cream.
