250g (about 8 oz) penne or fusilli pasta

3 cups vegetable broth

½ cup heavy cream or coconut cream (for dairy-free)

½ cup grated Parmesan or plant-based cheese

🥣 Instructions:
1. Sauté Aromatics in Ceramic Cookware
Place your ceramic-coated pot or deep sauté pan over medium heat. Add olive oil, then sauté garlic and onion for 1–2 minutes until fragrant. Add zucchini and mushrooms, cooking until slightly softened, about 4 minutes.
2. Add Tomatoes & Seasoning
Stir in cherry tomatoes, Italian seasoning, salt, and pepper. Cook for another 2 minutes, allowing the tomatoes to start releasing their juices.
3. Add Pasta & Simmer
Add the dry pasta directly to the pot along with the vegetable broth. Stir to combine. Bring to a simmer, then reduce heat to medium-low. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
4. Stir in Cream & Greens
Uncover and stir in the cream and spinach. Cook for 2–3 more minutes until greens are wilted and everything is creamy and combined.
5. Finish with Cheese
Turn off the heat and stir in grated Parmesan. Taste and adjust seasoning. Let rest for a few minutes so the sauce thickens slightly.
