This Sweet & Spicy Pineapple Chicken Stir-Fry is a quick, colorful, and crave-worthy dish that hits all the right notes—sweet from the juicy pineapple, spicy from the chili, and savory from the soy and garlic. Perfect for weeknight dinners, and ready in under 30 minutes!
🍍 Ingredients:
For the Chicken:

1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

Salt & pepper to taste

1 tbsp cornstarch (optional, for crispier texture)

1 tbsp vegetable oil
For the Stir-Fry:

1 cup fresh pineapple chunks (or canned in juice, drained)

1 red bell pepper, sliced

1 small red onion, sliced
-
2–3 garlic cloves, minced

1 tsp fresh ginger, grated

2 green onions, chopped (for garnish)

Sesame seeds (optional)
For the Sauce:

3 tbsp soy sauce

2 tbsp honey

1 tbsp rice vinegar or lime juice

1 tbsp sriracha or hot sauce (adjust to your spice preference)

2 tbsp pineapple juice (from the fruit or can)

1 tsp cornstarch + 1 tbsp water (to thicken)
🔥 Instructions:
1. Prep the Chicken
Season chicken with salt, pepper, and a light dusting of cornstarch. Heat oil in a large skillet or wok over medium-high heat. Cook chicken until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
2. Sauté the Veggies
In the same pan, add a bit more oil if needed. Sauté garlic, ginger, onion, and bell pepper for 2–3 minutes until slightly softened. Add pineapple chunks and stir-fry another 2 minutes.
3. Make the Sauce
In a small bowl, whisk together soy sauce, honey, vinegar/lime juice, sriracha, and pineapple juice. Stir in the cornstarch slurry.
4. Bring it All Together
Return the chicken to the pan, pour in the sauce, and stir until everything is coated. Let simmer for 2–3 minutes until sauce thickens and turns glossy.
5. Garnish & Serve
Sprinkle with green onions and sesame seeds. Serve hot over steamed rice, jasmine rice, or noodles.
