Ingredients

  • 1 lb large sea scallops, patted dry

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter (divided)

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • Zest of ½ lemon

  • 2 tbsp fresh parsley, chopped

  • Salt & freshly ground black pepper, to taste


Instructions

  1. Prep the Scallops – Ensure scallops are completely dry for the best sear. Season lightly with salt and pepper.

  2. Sear – Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. When hot, add scallops in a single layer, leaving space between each. Cook 2–3 minutes per side until golden brown and opaque in the center. Remove and set aside.

  3. Make the Sauce – In the same skillet, lower heat to medium. Add garlic and sauté for 30 seconds. Stir in lemon juice, zest, and remaining butter. Let simmer for 1 minute.

  4. Finish – Return scallops to the skillet, spoon sauce over them, and sprinkle with fresh parsley. Serve immediately.
