Grilled Peach & Burrata Salad

Serves: 4 | Prep Time: 10 mins | Cook Time: 6 mins

Ingredients

  • 3 ripe peaches, halved and pitted

  • 1 tbsp olive oil

  • 6 cups fresh arugula

  • 2 balls burrata cheese (about 8 oz total)

  • ¼ cup toasted almonds or walnuts

  • 2 tbsp fresh basil leaves, torn

  • Salt & black pepper, to taste

  • 2 tbsp balsamic glaze

Instructions

  1. Prep the Peaches – Brush peach halves lightly with olive oil.

  2. Grill – Heat a grill or grill pan over medium-high heat. Place peaches cut-side down and grill for 2–3 minutes until char marks appear. Flip and grill for another minute. Remove and let cool slightly, then slice.

  3. Assemble the Salad – Arrange arugula on a platter. Top with grilled peach slices, burrata, toasted nuts, and fresh basil.

  4. Season & Serve – Sprinkle with salt and pepper, then drizzle generously with balsamic glaze. Serve immediately.

Why This Recipe Works
The smokiness from the grilled peaches enhances their sweetness, while burrata adds a luxurious creaminess. The peppery bite of arugula and crunch from the nuts create a perfect balance of textures and flavors—ideal for summer entertaining.
