Golden, Crunchy, and Totally Addictive
These zucchini fritters are crispy on the outside, tender on the inside, and packed with flavor. Served with a cool herbed yogurt dip, they make a light yet satisfying appetizer or snack—great for entertaining or a quick weekday bite.

For the Fritters:

2 medium zucchinis, grated

½ tsp salt

1 egg, lightly beaten

ÂĽ cup grated Parmesan

ÂĽ cup finely chopped spring onions or chives

2 tbsp chopped fresh parsley or dill

ÂĽ tsp baking powder

Freshly ground black pepper

Vegetable oil, for frying
For the Herbed Yogurt Dip:

½ cup plain Greek yogurt

1 tbsp olive oil
-
1 tsp lemon juice
-
1 tbsp chopped fresh dill or mint

Salt & pepper to taste
🔥 Instructions:
1. Prep the Zucchini
Grate zucchini and sprinkle with salt. Let sit in a strainer or cheesecloth for 10–15 minutes to release moisture. Squeeze out as much liquid as possible.
2. Mix the Batter
In a bowl, combine drained zucchini, egg, Parmesan, herbs, onions, flour, baking powder, and pepper. Mix well until a thick batter forms.
3. Fry the Fritters
Heat a thin layer of oil in a non-stick pan over medium heat. Scoop tablespoons of the batter into the pan, flattening slightly. Fry for 2–3 minutes per side or until golden and crispy. Drain on paper towels.
4. Make the Dip
Mix yogurt, olive oil, lemon juice, herbs, salt, and pepper in a small bowl.
5. Serve
Serve fritters warm with a side of herbed yogurt dip. Garnish with extra herbs if desired.
