These Crispy Stuffed Mini Bell Peppers are a perfect appetizer for any gathering—easy to prep, bursting with flavor, and beautifully colorful. Each pepper is filled with a creamy herbed cheese blend and topped with a crispy panko crust for that irresistible crunch.

12 mini bell peppers (mixed colors)

1 cup cream cheese, softened

½ cup shredded mozzarella or sharp cheddar

ÂĽ cup finely chopped green onions

1 tsp garlic powder

½ tsp dried oregano

Salt & pepper to taste

Optional: chili flakes or hot sauce for a kick
🔥 Instructions:
1. Prep the Peppers
Slice mini bell peppers in half lengthwise and remove seeds. Place cut-side up on a lined baking tray.
2. Make the Filling
In a mixing bowl, combine cream cheese, shredded cheese, green onions, garlic powder, oregano, salt, and pepper. Mix until smooth. For heat, add a pinch of chili flakes or a dash of hot sauce.
3. Stuff the Peppers
Spoon the cheese filling into each pepper half, smoothing the top.
4. Top & Bake
In a small bowl, mix panko breadcrumbs with olive oil. Sprinkle generously over each filled pepper.
Bake in a preheated oven at 375°F (190°C) for 15–20 minutes, or until tops are golden and peppers are just tender.
5. Serve
Garnish with chopped parsley or a drizzle of balsamic glaze. Serve warm or at room temp.
