Looking for a light, refreshing side that still packs a punch of flavor? This Asian Apple Slaw blends the crisp sweetness of apples with crunchy veggies and a zingy sesame-ginger dressing. It’s a colorful crowd-pleaser that’s as good at a weekend BBQ as it is with weekday stir-fry.
🍏 Ingredients:
For the Slaw:
-
2 medium apples (Fuji or Granny Smith), julienned or thinly sliced
-
1 ½ cups red cabbage, shredded
-
1 ½ cups green cabbage, shredded
-
1 medium carrot, julienned
-
½ red bell pepper, thinly sliced
-
2 green onions, chopped
-
¼ cup fresh cilantro, chopped
-
2 tbsp toasted sesame seeds (optional but recommended)
For the Dressing:
-
3 tbsp rice vinegar
-
1 tbsp soy sauce
-
1 tbsp honey or maple syrup
-
1 tbsp sesame oil
-
1 tbsp lime juice
-
1 tsp grated fresh ginger
-
1 clove garlic, minced
-
Pinch of chili flakes or a dash of sriracha (optional for heat)
🥣 Instructions:
1. Prep the Produce
Thinly slice or julienne your apples and veggies. If prepping ahead, toss the apple slices in a little lime juice to prevent browning.
2. Whisk the Dressing
In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, lime juice, ginger, garlic, and chili flakes until smooth and emulsified.
3. Toss it All Together
In a large mixing bowl, combine all slaw ingredients. Pour the dressing over and toss thoroughly to coat. Let it sit for 10–15 minutes before serving for the flavors to marry.
4. Finish and Serve
Sprinkle with sesame seeds just before serving. Serve chilled or at room temperature.
